Pachamama’s Beautiful Food ~ Cooking with the Elements

Margaret Gilfoyle trained and received initiations from indigenous healers of Peru, Brazil and Ecuador during the last decade - her first introduction to the presence of PACHAMAMA, Mother Earth to the Quechuan speaking people of South America. “Their traditions and beliefs in the Feminine Spirit which lived within the Earth itself rang true and deep within me.”

Pachamama and the Creator offer their gifts freely and abundantly within the intricate, infinitely beautiful web of life. In gratefulness of receiving these, we can learn more fully the joy of giving reciprocally what we have to offer in return. We honor Pachamama as we assist nature and people in respectful, sustainable ways. Cooking with love and the intention of bringing energy of peaceful joy as meals are prepared makes even the simplest cuisine and dishes very special to friends and family sitting down at your table, and assists the Earth's energy to resonate with more love, your love.

First potato salad of the season🌞 Simple/classic - chopped Yukon golds and eggs boiled together. Herbs from the garden: lots of minced chives and their flowers, dill and lemon thyme. Organic mayo and spicy brown mustard. Himalayan pink salt and lots of freshly ground mixed peppercorn. Second day even better than the first. Next photo my simple meal - homemade bbq tofu and sauce, and perfect spicy crisp radishes from #raisinrootsfarm. I like to bake the tofu with a thin film of olive oil on a sheet pan, flip to brown second side, then steep in an oh so easy sauce of organic ketchup, a little blackstrap molasses and puréed chipotle peppers in adobo. Remembering loved ones this Memorial Day, both known and unknown, our entire human family. After a perfectly luscious morning in the garden, I’m back home with a spring rain falling, baking these lovely donuts - lemon lavender with local wildflower honey cream cheese and blueberry filling. There is such a sweet tale behind these chubby bean sprouts popping up in my garden. My big brother, Davy, who lives in Northern California, sent me a bag of their seeds - Italian green beans - that he had saved from his own garden last year. They were given to he and my sister in law Angie by an across-the-street neighbor. And those seeds were from the bean plants that grew in her garden every year, ever since her 100 year old Italian grandma had introduced them to her long ago. So dear! But the back story brings an even more special aura to these beans, traveling from the west coast to me - and just today, sprouting, experiencing the first inkling of their new lives here in Colorado around a bamboo tipi in my community garden plot. Davy told me he remembered the very first time he ever tasted Italian green beans, years before my twin sister Mary and I were even born. 🌱🌱🌱🌱🌱💛 One of our Grandmas flew out to Chicago from her home in upstate New York to meet up with our family traveling east from our home in Iowa - father and mother, our sister Sandy, and Davy. He was about 7 years old at the time. They all stayed in a big hotel, he remembers, and it was a happy, happy reunion. One dinner they had at the hotel featured a new vegetable he thought was so delicious. Italian green beans.
